This is one of the recipes I've bookmarked quite some time ago from Patrcia Scarpin's blog Technicolor Kitchen. First of all the recipe is from the fabulous Donna Hay; and second of all, it calls for a cup of yogurt. I am all for recipes with yogurt or buttermilk because they are healthy and the end result would definitely be decadently moist. I knew from the start that these muffins would be so moist - and they were indeed. Take note that the muffins are on the less sweet side, so I added some raisins for extra natural sweetness. You could add some apples too if you like, or maybe increase the sugar...but that would not be a healthier option right?
Carrot Muffins

Ingredients:
2 cups (280g) all purpose flour
2 teaspoons baking powder
¾ cup + 1 tablespoon (162g) caster sugar *I used 100g caster sugar and 70g light brown sugar
pinch of salt
1 cup (260g) plain yogurt
2 eggs
½ cup (120ml) vegetable oil
finely grated zest of 1 large lemon
1 ½ cups (135g) grated carrot
1/4 cup raisins *I added
icing sugar, to serve
Method:
1. Preheat the oven to 180°C/350°F; line twelve ½-cup (120ml) capacity muffin pans with paper cases.
2. Sift flour and baking powder into a large bowl. Add the sugar and salt and stir to combine. Set aside.
3. Place the yogurt, eggs, oil and lemon zest in a bowl and whisk until
smooth. Add the yogurt mixture, grated carrot and raisins to the flour mixture and whisk
just until combined – use a fork to mix and do not overmix; the batter
is supposed to be lumpy.
4. Spoon the batter into the prepared cases and bake for 20-25 minutes or until golden and cooked when tested with a skewer. *I baked for 20 mins
5. Sprinkle with icing sugar to serve.
Makes 12
Muffin Lobak Merah

Bahan-bahan:
2 cawan (280g) tepung gandum
2 sudu kecil baking powder
¾ cawan + 1 sudu besar (162g) gula kaster *saya guna 100g gula kaster dan 70g gula perang
secubit garam
1 cawan (260g) yogurt
2 biji telur
½ cawan (120ml) minyak sayuran
parutan kulit sebiji lemon
1 ½ cawan (135g) parutan lobak merah
1/4 cawan kismis *saya tambah
gula aising, untuk tabur atas muffin
Cara-cara:
1. Panaskan oven pada suhu 180°C/350°F; Alas loyang muffin dengan kertas cupcake.
2. Ayak bersama tepung gandum dan baking powder ke dalam satu mangkuk besar. Masukkan gula dan garam. Kacau rata dengan whisk. Ketepikan.
3. Dalam bekas yang lain, satukan yogurt, telur, minyak sayuran dan parutan kulit lemon dan kacau sebati dengan whisk. Tuang adunan yogurt tadi, parutan lobak merah dan kismis ke dalam campuran tepung. Gaul rata dengan whisk; jangan terlebih kacau.
4. Tuang adunan ke dalam loyang muffin tadi dan bakar selama 20-25 minit atau sehingga masak. *saya bakar 20 minit
5. Tabur dengan gula aising jika suka.

Nutella Swirled Banana Muffin/ Muffin Pisang Nutella
This recipe had me at Nutella. Enough said. Nutella just makes everyhting good. The chocolate-y crunchy muffin top is to-die-for!
Nutella Swirled Banana Muffins Source: Sweet Pea's Kitchen
Ingredients:
2 cups (250g) unbleached all-purpose flour
3/4 cup (150g) granulated sugar *I used 100g granulated sugar and 50g light brown sugar
3/4 teaspoon baking soda
1/2 teaspoon table salt
3 very ripe large bananas, soft, darkly speckled, mashed well (about 1 1/2 cups) *I used 5 medium bananas
1/4 cup plain yogurt
2 large eggs, beaten lightly
6 tablespoons (85g) unsalted butter, melted and cooled
1 teaspoon vanilla extract
1/4 cup toasted hazelnuts, coarsely chopped *I used chopped dark chocolate
1/4 cup Nutella *I zapped it in microwave for a few seconds for easier swirling
2. In a large bowl combine flour, sugar, baking soda, and salt; set aside.
3. In a medium bowl mix mashed bananas, yogurt, eggs, butter, and vanilla with wooden spoon. Lightly fold banana mixture into dry ingredients with rubber spatula until just combined and batter looks thick and chunky. Fold in hazelnuts (or chopped chocolate).
4. Divide batter equally among prepared muffin cups. Place 1 teaspoon of Nutella on top of each muffin. Swirl with a toothpick.
5. Bake until golden and toothpick inserted into center of muffin comes out clean, 20 to 24 minutes. Remove muffins from tin and serve.

Muffin Pisang Nutella

Bahan-bahan:
2 cawan (250g) tepung gandum
3/4 cawan (150g) gula kaster *saya guna 100g gula kaster & 50g gula perang
3/4 sudu kecil baking soda
1/2 sudu kecil garam *guna secubit kalau guna mentega bergaram
3 biji pisang masak ranum, dilecek halus (anggaran 1 1/2 cawan) *saya guna 5 biji pisang
1/4 cawan yogurt asli
2 biji telur, dikocok
6 sudu besar (85g) mentega tanpa garam, dicairkan dan disejukkan
1 sudu kecil esen vanilla
1/4 cawan kacang hazelnut disangai dan dicincang kasar *saya guna dark chocolate dicincang kasar
1/4 cawan Nutella *microvawe untuk beberapa saat
Cara-cara:
2. Dalam satu bekas yang besar, satukan tepung gandum, gula (kaster & perang), baking soda dan garam. Ketepikan.
3. Dalam bekas yang lain, gaul sebati pisang lecek, yogurt, telur, mentega cair dan esen vanilla. Selepas itu, tuang adunan pisang ke dalam campuran tepung (dry ingredients) dan kacau hingga semua adunan bersatu (jangan terlebih kacau!). Masukkan kacang hazel (atau coklat cincang) dan gaul rata.
4. Sudukan adunan ke dalam loyang muffin. Masukkan 1 sudu kecil Nutella ke dalam setiap muffin dan lorekkan dengan pencungkil gigi.
5. Bakar hingga masak sempurna dan garing, dalam 20-24 minit.

Cheddar Banana Crumble Muffin/ Muffin Pisang Crumble Berkeju
These muffins are super simple to make and extremely delicious! A good way to use up all your over-ripe bananas. Thank you Kak Hana from Hana's Family for sharing this wonderful recipe. The muffins rise to the top, just like what muffins should! I added a tablespoon of yogurt into the batter and oat to the crumble. Those are the only adaptations I have made. This recipe is a definite keeper!
Cheddar Banana Crumble Muffin
Adapted slightly from Hana's Family
Ingredients
- 250g regular, all purpose flour
- 100g caster sugar
- 50g brown sugar
- 1/2 tsp baking soda
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 75g cheddar cheese - roughly chopped
- 300g banana *I used cavendish
- 2 eggs
- 100g butter - melted
- 1/2 tsp vanilla extract
- 1 tbsp plain yogurt or milk
- 40g brown sugar
- 40g cold butter - cubed
- 20g flour
- 20g oat
- a pinch of cinnamon
Method
- For the crumble - Mix the sugar,flour,oat, and cinnamon together. Rub in the cold butter until mixture resembles coarse bread crumbs. Store in the fridge while you prepare the muffin.
- Preheat the oven to 190C. In a bowl, whisk together the dry ingredients- flour, baking powder, baking soda, salt, cheddar cheese, caster sugar and brown sugar. Set aside.
- In another bowl, mash the bananas. Then, whisk in all the wet ingredients- melted butter,eggs,vanilla and yogurt.
- Pour in the wet ingredients mixture into the dry ingredients and stir with a wooden spatula to combine. Do not over mix.
- Spoon the batter into a lined muffin "12 muffin tray 3/4 full. Crumble the crumble mixture on top.
- Bake for 25 mins.
Muffin Pisang Crumble Berkeju

Bahan-bahan
- 250g tepung gandum
- 100g gula custor
- 50g gula perang
- 1/2 sk soda bikarbonat
- 11/2 sk baking powder
- 1/4 sk garam
- 75g keju cheddar - cincang kasar
- 300g pisang
- 2 biji telur
- 100g mentega - cairkan
- 1/2 sk esen vanila
- 1 sb yogurt plain atau susu

- 40g gula perang
- 40g butter sejuk - potong dadu
- 20g tepung gandum
- 20g oat
- secubit serbuk kayu manis
Cara-cara
- Untuk Crumb - Campur gula perang, tepung, garam dan kayu manis. Kacau rata. Masukkan butter dan gentel2kan sehingga jadik serbuk crumbs. Simpan dalam peti sejuk sehingga masa hendak dgunakan.
- Panaskan oven suhu 190C. Dalam mangkuk campur tepung, baking powder, garam, keju, gula custor dan gula perang. gaul rata dan ketepikan.
- Mangkuk lain, lenyek pisang. Kemudian masukkan mentega cair, telur, esen vanila dan yogurt. Kacau menggunakan whisk sehingga sebati.
- Tuang ke dalam campuran tepung tadi dan kacau rata menggunakan senduk kayu/spatula. Tak perlu over mix. Kacau asal sebati.
- Tuang adunan ke dalam muffin cup sehingga 3/4 penuh. Taburkan crumbs dr peti sejuk tadi.
- Bakar selama 25min. Keluarkan dr oven, biarkan 5 min baru keluarkan dari loyang/muffin tray.
- Letak atas redai. Boleh hiaskan dengan hirisan pisang dan parutan coklat putih.
- Hidangkan hangat dengan secawan kopi.
